Theo Family Chocolatey Goodness

I can't wait to fill this page up with all the wonderful chocolaty ideas bumping around the office, but you have to start somewhere, and here it is:

Autumn's
Chocolate Martinis                     
Serves 4

  • Water
  • Theo 65%
  • Madagascar, 2 bars
  • 3400 Phinney Vanilla Milk Chocolate
  • 4 oz "Good" vodka
  • Fresh grapefruit
  • Sugar
  • Ice

Chop the Madagascar into little pieces and put in a heat-proof bowl. In a small sauce pot, bring water to a
simmer, then add to chocolate will stirring, until smooth.  Chill in the fridge, stirring occasionally to
cool evenly.

Grind Vanilla Milk Chocolate bar and 1/4 cup of the sugar in a coffee grinder or food processor. You don't want this chocolate to melt so short bursts of grindage and speed will aid you in your quest. Set aside on plate for rimming.

Cut and seed grapefruit and juice half into your cooled 'ganache' adding as much of the actual fruit pieces as you like, and mix very well.

Use remaining grapefruit half to coat the rim of four martini glasses, then roll in milk chocolate & sugar mixture.

In a martini shaker, combine vodka, ganache, and ice and shake well.

Pour into prepared glasses and garnish with grapefruit peel or a mint leaf for extra credit. Enjoy!
